Roasted Red Pepper And Garlic Dip

Thanksgiving entertaining is just around the corner, and Roasted Pepper and Garlic Dip is a lovely light orange colour that is perfect for fall entertaining. It is great served with vegetables for dipping, taco chips or crackers. It is full of nutrition. For a lower fat version, skip the cream cheese, and increase the sour cream to 1 cup. You could also substitute the cream cheese for Greek yogurt. Roasted red pepper is an excellent source of vitamin C, to support a healthy immune system. Red pepper also contains beta carotene, lutein, and zeaxanthin which are all protective for our eyes. Olive oil is heart and brain protective, and reduces inflammation throughout the body. The olive oil and roasted red pepper combination contain vitamin A and E, which are needed for collagen production. Sour cream and cream cheeses are sources of vitamin A, retinol, which is the active form that your body can use without converting. Lemon is an excellent source of vitamin C. Garlic is a powerhouse for health. Garlic is heart protective, boosts immunity and it is anti bacterial, anti fungal and antiviral, helping our body fight infection. Garlic is rich in antioxidants, and is a pre biotic, for good gut health, which also boosts our immune system. Whenever I make this Shrimp Dip, there is always someone who wants the recipe. For a thicker, richer dip, 1/2 cup of softened cream cheese can be substituted for the sour cream. Shrimp is a good source of important antioxidants selenium and astaxanthin as well as anti inflammatory sterols. Selenium is important mineral, and studies have shown that people with a higher intake of selenium, have a lower rate of cancer. Shrimp contains a lot of nutrients that are not common to our prairie diet, so including it will give you an abundant amount of vitamin B12, B6, B3, A, E, iodine, zinc and omega 3. The iodine contributes to a healthy thyroid and the zinc helps the body regulate leptin, and both nutrients aid in healthy weight regulation. Roasted Red Pepper and Garlic Dip 1/2 cup roasted red pepper 125 grams of cream cheese, 1/2 block 3 tablespoons olive oil 1 tablespoon lemon juice, 1/2 lemon squeezed 2 cloves garlic 1 teaspoon sea salt 1/2 cup sour cream

Combine all the ingredients, and blend together, in a blender or small food processor, until almost smooth. Shrimp Dip1/2 cup sour cream1/3 cup mayonnaise1 can of shrimp, drained1/4 teaspoon salt1 tablespoon finely chopped green onion1 tablespoon finely chopped parsley1 tablespoon fresh lemon juice

Combine all the ingredients except the shrimp. Drain the shrimp and pat dry with a paper towel, to prevent the liquid around the shrimp from making the dip too liquidy. Stir in the shrimp. Serve chilled, with a spoon.
